You can take a logo like I did and paste it onto the plate, or when you take pictures of your car tape a peice of paper over the plates..

To tell you the Truth, it really does not matter, thousands of people a day see your plates and what can they with it? what about car shows and drag strip when people take pictures of your car?

I understand about Identity protection.. Just use the eraser tool to white out the numbers, thats easy. there are several free tools to help
Paint shop pro is a good one. (free trial) you can also use Flicker or Photobucket to upload your pictures and they have online editors to do the same thing.
