I can't find a thing in my owners manual on how to check the transmission fluid level or the condition of the fluid. There is obviously no dip stick so what's up?

There is a plug within a plug on the trans pan that you take out while the car is running and the fluid should just slightly drip out at 180* trans temp.
Most of the time there is no reason to every check or adjust the trans fluid level but after converter replacment etc... you should use this method.
I hope that helps,
JJ

Yes it does, thanks. I was thinking that there most be some interval that the fluid needs changed, but I can't find any references.

Nope, it's a sealed system. Like JJ said, if you change the Converter then you would need to check the fluid. I had my trans fluid changes by the dealer at 55,000 miles, that also changed the filter and flushed the trans.
I plan on installing an larger trans cooler this winter, it runs at 180 deg now with a high stall converter
